Pumpkin Jam with Ginger and Vanilla

The other rabarbie first tasted pumpkin jam while she was staying in a small guesthouse in Portugal last year. She liked it so much she asked for the recipe and passed it on to me. In my turn I’ve been playing around with it and added some ginger and vanilla. Give it a try!

1.5-2 kg peeled, cubed pumpkin. (You are looking to use 1 kilo of cooked pumpkin ; it will lose some water as it cooks)

½ kilo of sugar (I often use sugar for jam-making that has a little pectin added to it).

Optional:

Ginger, about 3 cm peeled and grated

½ vanilla pod, scrape the seeds from the pod

Simmer the pumpkin gently in a pan of boiling water until slightly soft. Drain the water (save it for risotto or soup if you like) and return the pumpkin cubes to the pan.

Mash the cubes, add the sugar, ginger and vanilla and cook gently. Stir all the time until the sugar has dissolved. Add a little water if necessary to avoid burning the mixture.

Keep stirring the mixture until you can form little peaks and they hold their shape.

Test if the mixture is ready to set by placing a small amount on a cold plate and run your finger through it. If it stays in two separate parts then it is ready to set.

Fill into clean, sterilised jars straight away.
